Avocado & Cucumber Soup

This cold soup is refreshing, easy and uses no gas or ovens. You can serve this to your friends or cook it for your family after they come back from a hectic day or an exercise schedule.

Ingredients

Avocado (ripe) - 8 nos
Cucumber - 1 no
Garlic clove - 2 nos
Lemon juice - 2 tbl spn
Madras curry powder - 2 tsp
Mint leaves - 1/4th cup
Ice cubes - 6 nos
Cream - 1/2 cup
Salt - to taste
Black pepper crushed - 1/2 tsp

Method

  • Run a sharp knife from the top of the avocado in a circular motion. Slightly twist the avocado and separate the halves. Remove the seed and discard it. Peel off the hard skin and cut the avocado into very small dices.
  • In a food processor puree the avacados, cucumber, garlic, lemon, madras curry powder and mint leaves. Add few ice cubes to retain the colour of the avacados.
  • Pour out in a bowl and add in cream, salt and pepper. Serve chilled.
