Gajjar Ka Halwa with Ice Cream

Red Winter carrots grated - 4 cups
Sugar - 3 tbl spn
oil - 2 tbl spn
Pistachio halved - 10 nos
Almond broken - 1 tbl spn
Cashewnuts broken - 1 tbl spn
Milk (skimmed) - 1 cup
Vanilla essence - few drops


  • Put the grated red carrots in a pan and add sugar. Allow to sweat and cook in its own juice for some time. Now add milk and vanilla essence and let it cook on a slow flame.
  • Cook till 3/4th of the milk is evaporated.
  • Separately heat oil and lightly saute the dried fruits. Add the fruits along with the oil to the carrots and cook till all the milk is reduced. Serve hot.


This dessert popularly known as Gajjerella” is loaded with the goodness of carrots and the nutty flavor render a strong contrast to the sweetness finished off with the earthy vanilla.
