Subz Biryani

Fresh vegetables cooked on Dum with the finest Basmati.

Ingredients

Cauliflower (cut into florets) - 1cup
Beans(cut into 1 long) - 1/2 cup
Carrots(cut into 1 batons) -1cup
Green Peas -1cup
Salt - to taste
Red chilly powder -2tsp
Turmeric -2tsp
Yellow chilly powder - 1tbsp
Onions -400gm
Brown onion(browned using oil) -25gm
Yogurt -200gm
Ginger paste -100gm
Garlic paste -100gm
Green chilly -4nos
Mint leaves -1 cup
Saffron - 1/2 gm
Milk -100ml
Oil -300ml
Green Cardamom - 8 nos
Bayleaf - 2no
Cinnamon (1 long) - 3
Shahi jeera - 1tbsp
Kewra water -1tbsp
Rose water - 1tbsp
Javtri powder -2tsp
Cardamom powder -2tsp
Basmati Rice - 250gms

Method

  • Wash the rice and soak it for half hour. Wash all the vegetables.
  • Soak saffron in warm milk and keep aside.
  • In a clean handi heat oil, put green cardamom, bay leaf, cinnamon and shahi jeera. When they splutter add sliced onions and cook till they turn golden brown. At this stage quickly add ginger and garlic paste mixed with turmeric, red chilly powder, yellow chilly powder and little water. Saute thoroughly. Now add the whisked yogurt and increase the heat. Cook for 5 mins and then add vegetables, salt, green chilly slit and mint leaves. Now add the half of kewra water and rose water.
  • Cook till it gets one good boil and turn off the heat. In the mean time make stiff dough using whole wheat flour and water. Roll out in a cylindrical shape and using water stick the dough to a tight fitting lid. This lid will be used to seal the handi for Dum.
  • Separately boil enough water and add salt to it till it becomes salty enough. Drop 3 tbsp of oil and then add the rice to this. When the rice is half cooked, drain the water (reserve 1 1/2 cup of this water) and quickly add this rice on top of the vegetables. Now sprinkle javtri and cardamom powder, remaining kewra and rose water. 1 1/2 cup of reserved rice water, saffron dissolved in milk and 50 ml oil. Quickly cover the handi with the lid. Put on low heat and cook on dum for 1o mins. Turn off the heat and let it rest for 10 mins.

Notes

For making Biryani you can also inter layer the rice and the vegetables. This is generally done when you are cooking for large quantities.

You can always add the vegetables of your choice.
