Ingredients

  • Boiled pearl barley – 1 cup
  • Garlic Clove – ¼ no
  • Cucumber Chopped – ½ cup
  • Onion Chopped – 3tbsp
  • Pomegranate seeds – 1 cup
  • Walnuts Toasted – handful
  • Lemon juice – 1tbsp
  • Balsamic vinegar – 3tbsp
  • Salt – to taste
  • Pepper Powder – to taste
  • Mango Puree (sweetened) – 1/2 cup
  • Olive Oil – 2 tbsp
  • Orange Segments – ½ cup
  • Lettuce Chunks Assorted – handful
  • Cherry tomato halved – handful

Done

Finely chop the garlic and add it to the boiled & cooled barley. Add in rest of the ingredients and toss them together. Serve cold immediately.
