Ingredients

Baby potatoes - 2 cups
Oil - 3 tbl spn
Cinnamon - 1 no
Green Cardamom -6 no
Bay leaf -2 no
Cloves -5 no
Ginger -50 Gms
Garlic -50 Gms
Tomato -500 Gms
Onion -100 Gms
Deggi mirch -1 tbl spn
Green chili -2 no
Cashewnuts -100 Gms
Freshly chopped coriander -1/2 cup
Salt-1tsp
Raw mango chopped -3/4th cup
Sweetened Mango juice - 1 cup
Mustard seeds - 1 tbl spn
Curry leaves - 2 sprigs
Heeng - 1/4th tsp
Turmeric -1/2tsp
Coriander powder - 2 tsp
Water - 2cups

Method

  • Wash and cut the tomatoes in halves. Add water, ginger, garlic, green chilly, onions Ca-shewnuts, deggi mirch and put on medium fire. Add all the whole spices. Cook till tomatoes are mashy. Remove, puree and strain them.
  • Boil potatoes in enough water and keep aside.
  • Heat a handi and add oil. Add mustard seeds and once they crackle add heeng, sauteand then add curry leaves. Add potatoes and chopped raw mango. Sautethem and add turmer-ic, coriander powder and saute.
  • Then add the tomato curry and cook for 2 minutes. Add mango juice and salt, get it to a thick consistency. Sprinkle with chopped green coriander and serve hot.
