Pomegrante & Parsley Salad

Pomegranate seeds -- 2 cups
Flat leaf parsley -- 1 big bunch
Cous cous -- 1/4 cup
Mint Leaves - 1 small Bunch
Lemon - 1 no
Olive oil -- to drizzle


  • Add 1/2 cup of boiled water to cous cous. Cover & leave it for 20 mins. Once it cools down, fluff it up with a fork. Now add pomegranate seeds, salt, pepper, olive oil & squeeze lemon. Wash and clean parsley & mint. Chop them both fine & mix with the pomegranate. Toss & serve immediately.
