Ingredients

  • Tarbooz diced – 1/2 cup
  • Kharbooza green diced – 1/2 cup
  • Mint leaves – 1 cup
  • Ginger chopped – 1 tbl spn
  • Salt – 1 gm
  • Lemon juice – 2 tbl spn
  • Sarda diced – 1/2 cup
  • Kharbooza Orange Diced – 1/2 cup
  • Honey – 1 tbl spn
  • oil – 3 tbl spn
  • Black pepper powder – 2 gms
  • Pine nuts – 3 tbl spn

Steps

Toss together all the melons and place in a bowl.

Separately mix together mint leaves, ginger, honey, salt, pepper, lemon juice and half of the pine nuts in a blender and puree them. Add little by little oil to ease the grinding.

Remove and drizzle this pesto on to the melons. Toast the remaining pine nuts and sprinkle on the top. Serve cold.
