Cauliflower Soup

(गोभी का सूप)

Ingredients

Cauliflower, small (gobhi) – 1 no

Oil (तेल) – 1 tbsp

Butter (मक्खन) – 2 tbsp

Kalonji (कलौंजी) – ½ tsp

Garlic, chopped (लहसुन) – ½ tbsp

Onion, chopped (प्याज़) – 3 tbsp

Cauliflower leaves (ताज़ा धनिया) – handful

All Purpose Flour (मैदा) – 1½ tbsp

Salt (नमक) – to taste 

Milk (दूध)  – 1½ cups

Water (पानी) – 1½ cup

Water (पानी) – as required

Cheese, grated (चीज़) – ½ cup

Coriander, chopped (धनिया) – handful

Pepper Powder (काली मिर्च) – a pinch

For Cauliflower soup, in a large pot, melt the butter over medium heat. Add kalonji, cauliflower leaf, chopped garlic, and chopped onion. Sauté until the onions are translucent.

Sprinkle the flour and add the cauliflower florets, cheese and some salt to the pot. Stir and cook for a few minutes until the cauliflower starts to brown slightly. Slowly pour in the milk and water while stirring continuously to avoid lumps.

Allow the soup to come to a gentle simmer. Lower the heat, cover the pot, and let it simmer until the cauliflower is tender. This may take about 15-20 minutes. Once the cauliflower is soft, use a blender to puree the soup until smooth.

Stir in the grated cheese until it melts and is fully incorporated into the soup. Sprinkle some chopped coriander stem and pepper. Serve it hot and enjoy.
