No Onion No Garlic Malai Kofta
Ingredients
For Malai Kofta Curry
Oil (तेल) – 2 tbsp
Butter (मखन) – 2 tbsp
Cinnamon, 2” long (दालचीनी) – 1 stick
Bayleaf (तेज पत्ता) – 1 no
Cloves (लौंग) – 4-5 nos
Cardamom (इलाइची) – 4-5 nos
Black cardamom (काली इलाइची) – 2 nos
Ginger, roughly chopped (अदरक) – 2 tbsp
Green chillies (हरि मिर्च) – 2-3 nos
Tomato, roughly chopped (टमाटर) – 1 kg
Cashewnut (काजू) – 25-30 nos
Salt (नमक) – to taste
Turmeric (हल्दी) – ½ tsp
Coriander powder (धनिया पाउडर) – 1½ tbsp
Cumin powder (जीरा पाउडर) – 2 tsp
Kashmiri chilli powder (कश्मीरी मिर्च पाउडर) – 1½ tbsp
Water (पानी) – ½ cup
For Kofta
(Nw. 600gms) (15 koftas weighing 40 gms each)
Paneer, mashed (पनीर) – 1½ cup (200gms)
Potato, boiled & mashed (उबला आलू) – 1 cup
Green chilli, chopped (हरि मिर्च) – 2 nos
Ginger, chopped (अदरक) – 1 tbsp
Cashewnut, toasted & chopped (काजू) – ¼ cup
Coriander, chopped (ताज़ा धनिया) – handful
Salt (नमक) – to taste
Cornstarch (कॉर्नफ्लोर) – 3 tbsp (approx)
Oil (तेल) – for frying
For finishing
Oil (तेल) – 1 tbsp
Butter (मखन) – 2 tbsp
Green chilli, slit (हरि मिर्च) – 2 nos
Ginger, chopped (अदरक) – 2 tsp
Water (पानी) – 2 cups
Salt (नमक) – to taste
Kasoori Methi Powder (कसूरी मेथी पाउडर) – ½ tsp
Sugar (चीनी) – 1 tsp
Fresh Cream (ताज़ी क्रीम) – ¼ cup
