Madras Curry Powder 

Ingredients

Bayleaf (तेज पत्ता) – 3 nos

Dried red chillies (सूखी लाल मिर्च) – 8 nos

Coriander seeds (धनिया बीज) – 2½ tbsp

Black pepper whole (काली मिर्च) – 1 tbsp

Fenugreek (मेथी दाना) – 1 tsp

Fennel seeds (सौंफ़) – 1 tbsp + 1 tsp

Cinnamon (दालचीनी) – 3 nos

Salt (नमक) – 1 tsp

Cumin (जीरा) – 1 tbsp

Turmeric (हल्दी) – 1¼ tsp

Ginger powder (सौंठ पाउडर) – 1 tbsp

Garlic powder (लहसुन पाउडर) – 2 tsp

The Madras curry powder is one of the most iconic curry powders in the world.
For that, in a hot pan, add bay leaves, dried red chillies, coriander seeds, black peppercorns, fenugreek, fennel seeds, cinnamon and cumin, then gently toss them. Roast it on low flame till the spices turn a little brown.

Turn the gas off and cool it down. Now it’s time to add powdered spices. Add turmeric powder, dry ginger powder and dried garlic powder. Add a little salt.

The last step is to grind the spices into a fine powder. The Madras curry powder is ready. You can use this in Thai curry, Singapore rice or any south Indian dish.
