Dhaniya Panjiri & Panchamrit 

Ingredients 

For Panjiri 

Coriander seeds (धनिया बीज) – ½ cup

Ghee (घी) – 2 tbsp

Fox nuts (मखाना) – ½ cup

Ghee (घी) – 2 tbsp

Chironji (चिरौंजी) – 2 tbsp

Mellon Seeds (मगज़) – 2 tbsp

Cashew nuts, chopped (काजू) – 2 tbsp

Almonds, chopped (बादाम) – 2 tbsp

Dried desiccated coconut (सूखा नारियल बुरादा) – 5 tbsp

Raisins (किशमिश) – handful

Cardamom powder (इलाइची पाउडर) – ¾ tsp

Sugar, fine grain or powdered (बारीक चीनी) – ½ cup

Tulsi leaves (तुलसी पत्ता) – 4-5 sprigs

 

For Panchamrit 

Cow Milk, raw (कच्चा गाय का दूध) – 1 cup

Curd, homemade (दही) – 2-3 tbsp

Sugar (चीनी) – 1 tbsp

Honey (शहद) – 2 tsp

Ghee (घी) – 1 tbsp

Almonds, chopped (बादाम) – 1 tbsp

Raisins (किशमिश) – handful

Cashew nuts, chopped (काजू) – 1 tbsp

Chironji (चिरौंजी) – 1 tbsp

Magaz (मगज़) – 1 tbsp

Fox nuts (मखाना) – handful

Ganga jal (गंगा जल) – a dash (optional)

Rose water (गुलाब जल) – 2 tsp

Tulsi leaves (तुलसी पत्ता) – 4-5 sprigs

For Panjiri, In a heated pan, roast foxnuts, chironji, melon seeds, cashews, and almonds in ghee. Once roasted, transfer these ingredients to a bowl and add toasted desiccated coconut and raisins. Next, coarsely grind some roasted coriander seeds in a grinder.

In a separate pan, heat a little ghee and add the ground coriander, cooking until its color deepens. Then, transfer the coriander powder to the bowl of dry fruits and add cardamom powder, fine-grain sugar, and tulsi leaves. Mix everything well, and your Dhaniya Panjiri is ready!

For Panchamrit, In a bowl, combine raw cow milk, curd, sugar, honey, desi ghee, almonds, raisins, cashews, chironji, melon seeds, foxnuts, Ganga jal, rose water, and tulsi leaves. Mix thoroughly, and your Panchamrit is ready!
