Ingredient
Spinach leaves – 500 gms (1bunch)
After blanching and squeezing it becomes 130gms
Oil – 1½ tbsp
Butter – 2 tbsp
Cumin – 1 tsp
Garlic chopped – ¾ tbsp
Ginger chopped – ¾ tbsp
Green chilli chopped – 1 no
Onion chopped – 2 tbsp
Cumin powder – ½ tsp
Chilli powder – 1 tsp
Paneer cubes – 20 0 gms
Salt – to taste
Cream – 2-3 tbsp
Method
In a pan, heat water and add palak leaves. Take out after a minute and add to ice cold water.
Squeeze the water out. In a mixer, add the palak and some water and blend into a fine puree.
In a pan, add some oil & butter. Add cumin, chopped garlic and cook till the garlic browns. Then add green chilli, ginger, chopped onion and cook for 2-3 minutes. Add the palak puree to this. Add some salt, cumin powder, chilli powder to this and cook. Add paneer and mix it gently. Cook for 3-4 mins. Remove from heat and add some cream to this. Palak paneer is ready.
