Lauki Raita 

Lauki Grated – ½ cup

Salt – ½ tsp

Ice cubes – few 

Curd – 1 cup

Salt – to taste

Black salt – ½ tsp 

Roasted cumin (pounded) – 2tsp

Ice cubes – few

Water a dash 

 

South Indian Raita

Curd – 1cup

Salt – to taste

Oil – 1tbsp

Dry red chilli – 1no

Mustard seeds – 1tsp

Cumin – 1tsp

Green cilli chopped – 1 tsp

Ginger chopped – ½ tsp

Curry leaves – few

Ice Cubes – few    

 

Fruit Raita

Curd – 1½ cup

Sugar – 2 tbsp

Mango diced – 1cup 

Ice Cubes – few    

Banana chopped – ¼ cup 

Grapes (chopped) – few 

Anar – ¼ cup 

Pista chopped – handful

Almonds chopped – handful

Vanilla extract – ½ tsp

 

Khatta Meetha Raita 

Curd – 1cup

Ice Cubes – few    

Water – a dash

Salt – to taste

Black salt – a pinch 

Mint chutney – 1tbsp

Imli chutney – ¼ cup

Grapes (chopped) – handful

Melon seeds (toasted) – 1tbsp

Banana (sliced) – ½ no

 

Biryani Raita (Burani) 

Oil – 2tbsp

Garlic chopped – 2tsp

Curd – 1½ cups

Salt – to taste

Black salt – to taste

Chilli powder – ½ tsp

Lauki Raita

Begin by peeling the lauki, Deseed the lauki by using length wise cuts and reserve the flesh. Grate the flesh using the biggest size on the grater. While the lauki is freshly grated, transfer the lauki into boiling water, seasoned with water. Give it a nice stir and boil for 2-3 minutes on high flame. This remove any unwanted flavours.
Drain the lauki and transfer into a bowl with ice water to stop the cooking. Drain the lauki again and using light hand press out any extra water from the lauki.Transfer to a bowl and add in the curd, salt, black salt, roasted cumin, a few ice cubes and a dash of water and mix well. Transfer to the serving bowl, garnish with a spring of coriander and serve.

South Indian Raita

Begin by mixing the salt into the curd.
Heat oil on a pan over medium flame and add in the mustard seeds, cumin and red chillies. Fry this for about 1 min or until the mustard seeds begin to splutter.
Then add in the green chillis, ginger and curry leaf. Fry this for about 30 sec and add into the curd.
Add in the ice cubes and mix well.
Transfer into the serving container and garnish with a sprig of curry leaf and fried red chilli.

Fruit Raita

Begin by taking the curd in a blender, add in the sugar and diced mangoes and ice. Blend until smooth.
Transfer this into a bowl and add fruits of your choice like banana, grapes, and anar. Next add in some chopped pista and almonds and a little vanilla extract.
Mix this well and transfer into the serving bowl. Garnish with a sprig of mint and serve.

Khatta Meetha Raita

Begin by taking the curd in a mixing bowl, add in some ice cube, cod water, salt and black salt.
Next add in the mint and imli chutney, chopped grapes, toasted melons seeds and a and sliced bananas.
Mix well, and transfer to a serving bowl. Garnish with roasted cumin, and imli chutney and serve,

Biryani Raita (Burani Raita)

Begin by heating some oil on a pan over low flame. Add in garlic and fry stirring continuously until it develops a brown colour. Once the colour is developed, transfer into another bowl and cool.
Once the garlic is cooled down, add in the curd, salt, black salt and chilli powder.
Mix well and keep aside to mature for 15 min.
Transfer into the serving container, garnished with some brown garlic and serve.
