Baingan Ka Bharta

Ingredients

Baingan round, large (गोल बैंगन) – 1 no  

Oil (तेल) – a dash 

Onion, medium (प्याज़) – 2 nos

Tomato, medium (टमाटर) – 3 nos

Oil (तेल) – 4 tbsp

Cumin (जीरा) – 1 tsp

Ginger, chopped (अदरक) – 2 tsp

Green chilli, chopped (हरि मिर्च) – 2 nos 

Salt (नमक) – to taste

Kashmiri chilli powder (कश्मीरी लाल मिर्च) – 1½ tsp 

Garam masala (गर्म मसाला) – a pinch 

Coriander, chopped (ताज़ा धनिया) – handful

Start by applying oil to the brinjal (eggplant) and make 3-4 top-down incisions in it. Grill the brinjal over an open flame until it becomes tender. Once cooked, place it in a bowl and cover it with a lid to allow the residual heat to cook it further from the inside.

Next, peel off the skin and remove the crown. Cut the brinjal into small dice. In a kadhai (wok), heat some oil and add cumin seeds, chopped ginger, chopped green chilies, and chopped onions. Sauté these ingredients until the onions become translucent.

Then, add salt and Kashmiri red chili powder, followed by diced tomatoes. Once the tomatoes start to release their juices, add the grilled brinjal dices. Cook everything on low flame with a lid on for 4-5 minutes. Finally, add garam masala and chopped coriander, mixing everything together. Your comforting homemade baingan bharta is ready to serve!
