Namak Pare Recipe – Namak pare is a crispy, tasty, and savory fried snack which are quite popular in north India. This recipe is a crisp version and not the flaky version. They puff up and become crisp while frying. there is also a sweet version and these are called Shakkar pare. Namak para & Shakkar para are popular snacks made during Diwali. Namak Pare also known as masala kaju namkeen. You can make them in bulk and store them in an airtight container and enjoy them with tea for the next few weeks.

 

(Kaju Namak Para)

Makes – 400gms

Ingredients

All Purpose Flour (Maida) – 300gm/ 1¼ cups

Salt – ½ tsp

Baking powder – ½ tsp

Baking soda – ½ tsp

Ajwain – ½ tsp

Ghee/Oil – 75gms/ ⅓ cup

Water – 150ml/ ⅔cup

Oil – for frying

 

For masala

Black salt – 1tbsp

Salt – ½ tbsp

Black pepper powder – ¾ tbsp

Chilli power – ¾ tbsp

Amchur – 2tbsp

Rub together maida, ghee, ajwain, baking powder, baking soda, oil and salt. And knead into a dough. Give rest for 10 mins and now roll it out thick 1cm.

Cut it into shape of a half moon and deep fry it in slow heat and once it starts floating then increase the temperature and fry till golden brown.

Now remove the kaju from hot oil and add the masala mixture to it and toss and serve.

For making the masala mix all the ingredients for masala and keep aside.
