Mango Almond Pudding

(No Bake | Eggless)

Ingredients

For almond milk (500ml)

Almonds (बादाम) – ¾ cup/ 120 nos/ 110 gms

Water (पानी) – 2½ cups

 

Cornflour (कॉर्नफ्लोर) – 35 gms/ 4½ tbsp

Cinnamon stick (दालचीनी) – 1 no

Vanilla essence (वैनिला एसेंस) – few drops

Sugar (चीनी) – 100 gms/ ½ cup

 

For Mango Sauce

Mango, large (आम) – 1no

Sugar (चीनी) – 50 gms/ ¼ cup

Water (पानी) – 1½ cup

Lemon, small (नींबू) – 1 no

Mint sprigs (पुदीना पत्ता) – for garnish

Begin by blending soaked almonds with water. Next, strain the mixture using a fine mesh bag to extract the almond milk.

Set aside some of the almond milk, and whisk in cornstarch into it. In a saucepan, bring the remaining almond milk to a boil, adding sugar and a cinnamon stick.

Once it’s boiling, whisk in the cornstarch mixture. Cook this blend until it reaches a very thick and gooey consistency. Afterward, remove the cinnamon stick and transfer the mixture into a mold. Allow it to set in the refrigerator for at least an hour.
