Aloo Gobhi Kebab 

Ingredients

Cauliflower, large (फूलगोभी) – 1 no/300g

Green chilli (हरी मिर्च) – 2-3 nos

Ginger, chopped (अदरक) – 2 tsp

Cumin (जीरा) – 1 tsp

Chaat masala (चाट मसाला) – 2 tsp

Salt (नमक) – to taste

Turmeric (हल्दी)- ½ tsp

Chilli powder( लाल मिर्च पॉउडर) – 1 tsp

Coriander chopped (धनिया) – handful

Potato, boiled & mashed (आलू) – 1 cup/ 250 gms

Cheese grated (चीज़) – ¼ cup

Gram Flour, roasted (भुना बेसन) – 2 tbsp

Oil (तेल) – for frying

 

Chilli Garlic Dip

Oil (तेल) – 3 tbsp

Peanuts (मूँगफली) – ¼ cup 

Green Chillies( हरि मिर्च) – 12-15 nos 

Garlic Cloves (लहसुन) – 15-18 nos

Salt (नमक) – to taste

Mint leaves (पुदीना) – handful

Chaat masala (चाट मसाला) – 2 tsp

Lemon (नींबू) – 1 no 

Hung curd (गाढ़ी दही) – 2 tbsp

For Aloo Gobhi Tikki, grate cauliflower, then add ginger, green chilli, cumin, turmeric, chilli powder, and chaat masala to a flat bowl or a plate.

Add salt to taste, then add bhuna besan, mashed potatoes, cheese, and coriander chopped to the mixture. This will help bind the tikki together.

Divide the mixture into equal-sized portions and shape each portion into a round or oval-shaped tikki.

Heat a pan or a griddle over medium heat and add a dash of oil for shallow frying. Once the oil is hot, carefully place the tikkis on the pan. Cook them on medium heat until they turn golden brown and crispy on both sides. You can add more oil if needed during the cooking process.

Once cooked, transfer the Aloo Gobhi Tikkis to a plate lined with a paper towel to absorb any excess oil. Serve it hot and enjoy!

For Chilli Garlic Techa Dip

For chutney, in a hot pan, drizzle some oil, then add peanuts. Roast them well. Roughly chop green chillies and add them to the pan along with garlic and salt to taste. Toss them and cook for a while.

Let it cool down and blend them along with some mint leaves, chaat masala, and lemon juice. Transfer it to a bowl, then add some hung curd and mix it up.

Chutney is ready! Serve it with the delicious aloo gobhi kebabs.
