Masala Bhurji Pav 

Ingredients

Eggs (अंडे) – 4 no

Salt (नमक) – ½ tsp

Butter (मक्खन) – 2 tbsp 

Onions, Chopped (प्याज) – ½ cup

Ginger, Chopped (अदरक) – ½ tsp

Garlic, Chopped (लहसुन) – ½ tsp (optional)

Green Chilli, Chopped (हरी मिर्च) – 1 no

Turmeric (हल्दी) – ½ tsp

Pav Bhaji Masala (पाव भाजी मसाला) – ½ tbsp

Tomato, Chopped (टमाटर) – ½ cup

Coriander, Chopped (धनिया) – handful

 

For Masala Pav

Pav (पाव) – 6 pcs 

Butter (मक्खन) – 2 tbsp

Pav Bhaji Masala (पाव भाजी मसाला) – a generous pinch

To make Masala Bhurji Pav, start by whisking eggs with salt. In a pan, melt butter and sauté chopped onions, ginger, garlic, and green chilli. Add turmeric, pav bhaji masala, chopped tomatoes, and cook until the tomatoes are soft. Pour in the whisked eggs and scramble until cooked. Garnish with chopped coriander.

For Masala Pav, slit pav horizontally, spread butter, and sprinkle pav bhaji masala. Toast until golden brown. Serve the Masala Bhurji with the toasted Pav. Enjoy your delicious Masala Bhurji Pav!
