For Masala Shikanji

Sugar (चीनी) – 1½ tbsp

Mint leaves (पुदीना पत्ता) – few leaves 

Shikanji masala (शिकंजी मसाला) – ¾ tsp 

Water (पानी) – a dash 

Lemon, medium (नींबू) – 1½ nos 

Ice cubes (बर्फ) – 4-5 nos

Chilled Water (ठंडा पानी) –  300ml / 1¼ cups

Lemon wedges (नींबू टुकड़ा) – for garnish 

 

For Lychee Shikanji

Lychee, small (लीची) – 14 nos

Lemon, medium (नींबू) – 1½ nos 

Chilled Water (ठंडा पानी) –  300ml / 1¼ cups

Shikanji masala (शिकंजी मसाला) – ½ tsp 

Sugar (चीनी) – 1½ tbsp

Basil seeds, soaked (सब्जा) – 1 tbsp

Lemon wedges (नींबू टुकड़ा) – for garnish 

 

For Jamun Shikanji

(1 cup- 15nos- 170gms)

Jamun (जामुन) – 12-15 nos/ 1 cup 

Sugar (चीनी) – 1½ tbsp

Shikanji masala (शिकंजी मसाला) – ¾ tsp 

Lemon, medium (नींबू) – 1½ nos 

Mint leaves (पुदीना पत्ता) – few leaves 

Ice cubes (बर्फ) – 4-5 nos

Chilled Water (ठंडा पानी) –  300ml / 1¼ cups

 

For Mango Shikanji

Mango, medium (आम) – 1 no

Lemon, medium (नींबू) – 1½ nos 

Sugar (चीनी) – 1½ tbsp

Shikanji masala (शिकंजी मसाला) – ¾ tsp 

Chilled Water (ठंडा पानी) –  300ml / 1¼ cups

Ice cubes (बर्फ) – 4-5 nos

For Shikanji Masala

For Shikanji Masala, In a pan, toast cumin, coriander seeds, black peppercorns, and cloves until the cumin changes color. Let the spices cool, then grind them to a fine consistency. Mix in ginger powder, mint powder, black salt, and regular salt. Your shikanji masala is now ready.

For Masala Shikanji

For Masala Shikanji, In a tall glass, add powdered sugar (as it mixes more easily than granulated sugar), along with mint leaves, and muddle them together. Next, add the shikanji masala and a dash of water, mixing until everything is homogeneous. Then, add lemon juice, ice cubes, and top it off with water. Mix well and garnish with lemon quarters. Your masala shikanji is ready to serve!

For Litchi Masala Shikanji, In a blender, add deseeded litchis, ice cubes, chilled water, lemon juice, shikanji masala, and sugar. In a glass, add soaked basil seeds and lemon quarters. Finally, top it off with the strained litchi shikanji.

For Jamun Masala Shikanji, Begin by deseeding and chopping the jamun flesh. Place it in a blender along with shikanji masala, sugar, lemon juice, mint leaves (optional), ice cubes, and chilled water. Blend until smooth. Strain it into a glass and garnish with mint leaves and lemon quarters. Enjoy!
