For Classic Modak or  (makes 20nos)

Prep Time – 30 min Cooking Time – 15 min  Serves – 6 people or 20 pc

For Filling

Ghee (घी) – 1 tbsp 

Coconut, Desiccated (नारियल) – 1 cup 

Jaggery, Grated (गुड़) – ½ cup 

Cardamom, Powder (हरी इलायची) – ½ tsp 

Cashew, Chopped (काजू) – Handful

Pista, Chopped (पिस्ता)- Handful

Nutmeg, Powder (जायफल) – a pinch 

 

For Dough 

Water (पानी) – 1 cup 

Rice Flour, Very Fine (चावल का आटा) – 1¼ cup

Salt (नमक) – a pinch

Ghee, Melted (घी) – as required

 

For Jim Jam Modak or Cookie Modak

Prep Time – 15 min Cooking Time – 5 min Serves – 6 pc or 3 people

Ingredients

Glucose Biscuit (बिस्कुट) – 160gms/32 biscuits

Butter (मक्खन) – 40 gm/4 tbsp

Milk (दूध) – 60ml/¼ cup

Fruit Jam (फ्रूट जैम) – 3-4tbsp

For Classic Modak Recipe

Begin by making the filling. In a pan, heat the ghee and add in the desiccated coconut. Cook over a flame for a few minutes till it is very aromatic and begins to just develop some colour.
Now add in the grated jaggery and keep cooking till all of the jaggery melts. To this add in the powdered cardamom, cashier and pista. Finish with some nutmeg powder and keep on the side to cool.
While the filling cools, take another pan and begin boiling water to it. Add in some salt and when the water comes to a boil, add in the rice flour, turn off the gas and mix it all well together using a wooden spatula.
Cover the pan and keep aside for 5 minute.

Now, open the pan and carefully check the temperature. If you can handle it, begin kneading the dough. The dough needs to be kneaded while it’s hot. Mix till it becomes a ball and comes together. Then cover with a damp cloth for another 5 min.
Portion the dough into balls of equal size. To make a modak by hand, take a portion and roll into a ball. Then press to spread like a disc. Using your finger and thumb spread out this disc from the edges so that it is thinner on the edge than it is in the centre.
Make frills by pinching on the sides. Then bring the pinched side together and join them by pinching together to make a conical top.
Alternatively you can also use amoul to make the modaks.
Once the shaped modaks are ready, steam them for 10 minutes.

For Jim Jam Modak

Begin by grinding the biscuit to a powder.
Then heat a pan over medium flame and add the butter. As it melts add in the biscuit powder and cook for 2 minutes while stirring.
Now add in the milk and quickly mix together. The mixture will resemble a soft pasty dough. Reserve over a flat container or plate.
In a bowl take some jam and mix together to make flowy.
Now take a modak mold and add the mixture. Use your thumb or a finger to make an indent.

Pour the jam into the indent then take small portion of the mixture a press over the indent to close it.
Carefully take out of the mold and place on a plate.
Repeat till the mixture is over. Store in the fridge to let it settle and hold shape as it cools.
It's ready to be enjoyed!
