(Blended corn soup spiced with curry powder & curry leaves, giving a smooth silken corn soup)

 

Ingredients

  •  Sweet corn kernels (boiled) – 2 cups
  • Butter – 2 tbsp
  • Cumin – 1 tsp
  • Bayleaf – 1 no
  • Onions chopped -¼  cup
  • Ginger chopped – 2 tsp
  • Garlic chopped – 2 tsp
  • Green chilly – 1 no
  • Curry leaves – 2 sprigs
  • Turmeric -½  tsp
  • Curry powder – 2 tsp
  • Flour (all purpose) – 1 tbsp
  • Salt – to taste
  • Pepper powder – a pinch
  • Water – 4 cups
  • Spring onions chopped – for garnishing
  • Pop corns – for garnish & as accompaniment

In a pan, melt butter, add bay leaf and cumin. Stir and then add green chilly, chopped onions, ginger and garlic. Give a quick stir for a minute. Now add curry leaves, turmeric and curry powder.  Quick stir and add corn. Cook the corn for 3 mins. Sprinkle salt, pepper powder and flour. Cook for a minute and then add water.

Bring it to a boil and cook for 3-4 mins. Remove from heat now and let it cool down a bit.

Now remove the bay leaf and pour it into mixer grinder jar and press start. Check once the contents are finely pureed, stop the machine and remove the soup and strain it. Once strained pour in a pan and bring to a boil, check for seasoning. Pour in a bowl and garnish with chopped spring onions and pop corns.
