Ingredients 

For Gajar Matar Subji

Mustard oil (सरसों तेल) – 5 tbsp

Cumin (जीरा) – 1 tap

Onion, Chopped (प्याज़) – 4 tbsp

Gajar, sliced (गाजर) – 3 cups 

Green Peas (मटर)- 1 cup

Salt (नमक) – to taste

Turmeric (हल्दी) – ½ tsp

Chilli flakes (कुट्टी मिर्च) – 2 tsp

Coriander, chopped (धनिया) – handful

Kasoori methi (कसूरी मेथी) – a pinch

 

Gajar Matar Macaroni using leftover Subji

Ingredients

Macaroni Pasta (मैकरोनी) – 1 cup

Butter (मखन) – 2 tbsp

Garlic, chopped (लहसुन) – 1 tsp

Gajar Matar Sabji (गाजर मटर सब्ज़ी) – 1 cup

Salt (नमक) – to taste

Chilli powder (लाल मिर्च)- ½ tsp 

Kasoori methi powder (कसूरी मेथी) – ¼ tsp

Water (पानी) – a dash

Milk (दूध) – ¼ cup 

Cheese, grated (चीज़) – ½ cup 

Coriander, chopped (धनिया) – handful

Gajar Matar Subji

First of all, peel the carrots and slice them. Then peel the green peas.
Now in a pan, add mustard oil and heat it well. Now add cumin in it and add chopped onions. Now, add the carrots and peas to it.
Add salt and turmeric powder and cook it on low flame. Cover the pan with a lid and cook it for 10 to 15 minutes.
Do not add extra water to it. Now add chilli flakes and then chopped coriander leaves.
Now add ghee to it.
That’s it. Serve it hot and enjoy.

Gajar Matar Masala Macaroni

Boil some water in a pan and add macaroni to it. Give it a quick stir. Cook it till the pasta is cooked. Now strain it.
Melt some butter in a pan and add chopped garlic. Now add the gajar matar sabzi into it. Add a little salt, chilli powder and kasoori methi and give it a toss.
Add pasta to the pan and toss it well. Then add the pasta water and a little milk. Now add a little cheese.
Mix it on low flame and thicken the sauce.
Serve hot and enjoy!
