Kheere Ki Sabji
Ingredients
Cucumber, medium (खीरा) – 4 nos
Mustard oil (सरसों तेल) – 4 tbsp
Dry red chilli (सूखी लाल मिर्च) – 2-3 nos
Heeng (हींग) – ½ tsp
Mustard seeds (सरसों तेल) – 1 tsp
Cumin (जीरा) – 1 tsp
Saunf (सौंफ) – 1 tsp
Curry leaves (कड़ी पत्ता) – a sprig
Ginger, chopped (अदरक) – 2 tsp
Garlic, chopped (लहसुन) – 2 tsp
Green chilli, chopped (हरि मिर्च) – 2 nos
Onion, chopped (प्याज़) – ¾ cup
Salt (नमक) – to taste
Mix Together
Curd (दही) – 1 cup
Gram Flour (बेसन) – 1 tbsp
Salt (नमक) – to taste
Turmeric (हल्दी) – ½ tsp
Chilli powder (मिर्च पाउडर) – 1½ tsp
Coriander powder (धनिया पाउडर) – 1 tbsp
Cumin powder (जीरा पाउडर) – 1½ tsp
Kasoori methi powder (कसूरी मेथी) – ½ tsp
Coriander, chopped (ताज़ा धनिया) – handfu

Begin by dicing cucumbers without peeling them, making sure to avoid any that are bitter. In a thick kadhai, heat some mustard oil. Add dried red chilies, asafoetida, mustard seeds, cumin seeds, fennel seeds, curry leaves, chopped ginger, chopped garlic, chopped green chilies, and chopped onions. Cook this mixture until the onions become translucent. |

Next, add the diced cucumbers and salt, allowing them to cook for 5-6 minutes until they become tender. While the cucumbers are cooking, prepare the curry mixture by combining yogurt, gram flour, turmeric, red chili powder, coriander powder, cumin powder, and kasoori methi powder in a bowl. Whisk the ingredients together until smooth. |
