Masala Macaroni

Serves 2

Macaroni Pasta – 2cups

Water – 1½ lt

Salt – be generous For sauce

Oil – 1tbsp

Butter – 2tbsp

Cumin – ½ tsp

Garlic Chopped – ½ tsp

Ginger chopped – ½ tsp

Green chilli chopped – 1no

Onion chopped – ½ cup

Capsicum chopped – ¼ cup

Turmeric – ½ tsp

Kashmiri Chilli powder – ½ tsp

Coriander powder – 1½ tsp

Tomato Chopped – ½ cup

Salt – to taste

Ketchup – 3tbsp

Kasoori methi powder – a pinch

Coriander chopped – handful

Mozarella cheese cubes – handful

Method

When making any pasta with a sauce or masala always make the sauce first and after that boil the pasta.

For the sauce heat a pan and add oil and butter, add cumin, chopped garlic, ginger and green chillies. Saute and add chopped onions. cook onions for 2-3mins and then add turmeric, chilli powder, coriander powder and give a quick stir. Drop in the tomatoes along with salt and cook for another 2-3 mins. Pour k=tomato Ketchup, kasoori methi and chopped capsicum. Toss them together and keep aside.

Now separately boil water and add generous amount of salt till the water is quite salty. In boiling water add dried pasta (macaroni) and give it a stir. Once it is boiled and cooked (time needed to boil is written on the pack of the pasta) strain the pasta and keep the pasta water.

Heat the sauce and add the pasta, sprinkle some salt and add a dash of pasta water. Toss the pasta or using a laddle stir, lift and drop the pasta in the pan. Cook for 3mins and turn off the heat. Add chopped coriander, mozarella cheese cubes and toss again. Plate and serve it hot.

  • add pasta to boiling water and once you drop the pasta stir it.
  • Always check the packet for dired pasta for how long to cook
  • Always save some water after straining the pasta
  • Always add pasta to the sauce and not the other way. Prepare the sauce first and then boil pasta.
