100gms Makhana
1/4th cup Sesame seeds
1/4th cup Gur (Jaggery)
2-3 tsp Water
2 tsp Saunf (Fennel seed)
a pinch Salt
2 pinch Black salt
¼ tsp Kali mirch (black pepper)
½ tsp Ginger powder
1 tsp +1 tsp Ghee/Butter
½ tsp Baking Soda
1/2 tsp Ginger powder
2 pinch Black salt

Gur Makhana is a popular North Indian snack made from lotus seeds, also known as fox nuts or phool makhana, coated with jaggery or gur, which is a type of unrefined cane sugar. It is commonly consumed during festive occasions, as well as during fasting or as a healthy snack. The lotus seeds are first roasted until they become crunchy, and then coated with melted jaggery or gur, which gives them a sweet and caramelized flavor. Gur Makhana is often spiced with cardamom, cinnamon, and other warming spices, which add a delightful aroma and flavor to this traditional Indian treat. Steps

In a kadhai, add some ghee, then add the makhana and roast them on medium
flame. After that, remove them to a plate.

Now, add some ghee and Jaggery to the kadhai and caramelised it. You can check
whether it is caramelized by dropping a drop of molten jaggery into the water, if it gets
hard that means it is done. Add some baking soda and mix it well.

Now add the roasted makhana, sesame seeds, saunf and a pinch of salt into it, and
mix them all well.

Convert it into a flat tray and let it cool down.

When it cools down, separate the makhanas that are stuck together, with your hands.
