Lauki Paneer Ka Chilla 

Prep time – 20 mins

Cooking time – 15 mins

Serves – 4 (8nos)

Ingredients 

Besan (बेसन) – 2 cups/ 200 gms

Suji (सूजी) – 4 tbsp/ 50 gms 

Salt (नमक) – to taste

Chilli Powder (लाल मिर्च पाउडर) – 1½ tsp

Turmeric (हल्दी) – ¾ tsp

Cumin Powder (जीरा पाउडर) – ½ tsp

Chaat Masala (चाट मसाला) – 2 tsp

Kasoori Methi Powder (कसूरी मेथी पाउडर) – a pinch

Ajwain (अजवाइन) – a pinch 

Water (पानी) – 1¼ cup / 300 ml 

Lauki, diced (लौकी) – 1 cup/ 150 gms

Water (पानी) – ¼ cup/ 60 ml

Green Chilli, chopped (हरि मिर्च) – 1-2 nos

Ginger, chopped (अदरक) – 2 tsp

 

For Paneer Stuffing

Oil (तेल) – 3 tbsp 

Cumin (जीरा) – 1 tsp

Green Chilli, chopped (हरि मिर्च) – 1 no

Ginger, chopped (अदरक) – 1 tsp

Green Peas, boiled (हरा मटर) – ¾ cup

Carrots, grated (गाजर) – 1 cup

Salt (नमक) – to taste 

Pepper Powder (काली मिर्च पाउडर) – ½ tsp  

Chaat Masala (चाट मसाला) – 1 tsp

Paneer, grated (पनीर) – 250 gms

Coriander, chopped (ताज़ा धनिया) – handful

Oil (तेल) – for drizzling

 

Mint chutney, and tamarind chutney are to be kept ready.

To prepare Lauki Paneer Ka Chilla, first, make the batter by mixing besan, suji, salt, chili powder, turmeric, cumin powder, chaat masala, kasoori methi powder, ajwain, and water. Let it rest for 15 minutes. In a blender, add diced lauki with some water, then add chopped green chilli and ginger. Blend it to a smooth paste. Mix the lauki with the prepared batter.

For the filling, heat oil, add cumin, chopped green chilli, and ginger. Stir in boiled green peas, grated carrots, salt, pepper powder, chaat masala, grated paneer, and chopped coriander. On a hot griddle, pour a ladle of batter and spread it. Place the paneer stuffing on one side and fold the chilla.

Drizzle oil and cook until both sides are golden brown. Serve the Lauki Paneer Ka Chilla hot with chutney or ketchup. Enjoy your delicious and nutritious meal!
