Now add in chopped coriander, bread crumbs, grated cheese and paneer. Mix them well and divide into smaller portions. Shape them into patties about 1.5cm thick. The size of the patty has to be as per the size of the bun. In a separate bowl mix flour, salt, pepper and water to make a thick batter.

Dunk the patty in the batter and then coat them in bread crumbs. Now shallow fry the patty in hot oil on tawa or you can also deep fry it. Cook on both sides and remove. Cut the burger buns from the centre, smear butter on the inside and cook them (buttered side) till crisp. On the base of bun smear mustard sauce, place a salad leaf, a dollop of chilli mayo, sliced gherkin, then the veg patty, a cheese slice, onion slice, tomato slice, mint mayo and then the top bread of the bun. Place a long tooth pick from top to the bottom of the burger to hold it together.
