Watermelon Subzi

  • Mustard Oil or Oil or ghee – 4 tbsp
  • Mustard seeds -1tsp
  • Dry red chilli – 2nos
  • Cumin – 1tsp
  • Fennel Seeds -1 tsp
  • Asafoestida (heeng) -½ tsp
  • Ginger chopped – 2tsp
  • Garlic Chopped – 2tsp
  • Green chilli – 1 no
  • Onion Chopped – ½ cup
  • Turmeric – ½ tsp
  • Chilli powder – ¾ tsp
  • Coriander powder -2tsp
  • Watermelon rind (peeled & diced) – 2cups
  • Dry methi leaves -1tsp
  • Salt – to taste
  • Coriander leaves – handful
  • Amchur powder or chaat masala – 1tsp

Heat mustard oil to high and lower the heat. Add dry red chilli, asafoetida and stir. Add mustard seeds and cumin. Once mustard seeds start to crackle add fennel seeds and onions. Cook the onions for a minute and then add ginger and garlic. Cook for another 2 minutes and then add turmeric, chilli powder and coriander powder. Stir and add salt. Immediately add the diced watermelon peel. Stir, cover and cook for 15mins.

Now add methi leaves, chopped coriander & chaat masala. Check if the peel is tender and cooked. If required cook some more till it is completely soft. Remove and serve hot.
