Mix Veg Paratha
Ingredients
For dough
Atta (आटा) – 2 cups
Salt (नमक) – ½ tsp
Oil (तेल) – 1½ tbsp
Water (पानी) – as required
Oil (तेल) – for cooking
For stuffing
Cauliflower, grated (फूल गोभी) – ½ cup
Onion, chopped (प्याज़) – ½ cup
Paneer, cubed (पनीर) – ½ cup
Boiled potato, small (उबला आलू) – 2 nos
Coriander, chopped (ताज़ा धनिया) – handful
Ginger, grated (अदरक) – 1 tbsp
Kasoori methi leaves (कसूरी मेथी) – a large pinch
Cumin (जीरा) – 1½ tsp
Green chilli, chopped (हरि मिर्च) – 2 nos
Turmeric (हल्दी) – ½ tsp
Chilli powder (मिर्ची पाउडर) – 1½ tsp
Garam masala (गर्म मसाला) – ½ tsp
Salt (नमक) – to taste
Chaat masala (चाट मसाला) – 2 tsp
Pudina Raita
For grinding
Mint leaves (पुदीना) – 1 cup
Curd (दही) – ¼ cup
Curd (दही) – 1½ cup
Green chilli (हरि मिर्च) – 1 no
Roasted cumin crushed (भुना जीरा) – 1½ tsp
Black pepper powder (काली मिर्च पाउडर) – ½ tsp
Chaat masala (चाट मसाला) – 2 tsp
Salt (नमक) – to taste
Black salt (काला नमक) – ½ tsp

Start by kneading a tight dough using whole wheat flour, salt, oil, and water. Coat the dough with oil and let it rest for 10-15 minutes. |

Evenly divide the dough and shape it into small spheres, then let them rest. Shape each sphere, stuff it with the vegetable mixture, and roll it out evenly. Transfer the rolled paratha onto a hot pan. Flip it once one side is cooked, and spread oil on both sides after flipping. Cook until it is golden brown on both sides, and your dhaba-style mixed vegetable paratha is ready. |

For the mint raita, add mint leaves, a small amount of curd, and green chilies to a blender and blend until smooth. Transfer the mixture to a bowl and add thick curd, roasted cumin powder, black pepper powder, chaat masala, salt, and black salt. Mix well, and your mint raita (pudina raita) is ready to serve! |
