Steps

1
Done

Start by kneading a tight dough using whole wheat flour, salt, oil, and water. Coat the dough with oil and let it rest for 10-15 minutes.
Next, prepare the filling by mixing grated cauliflower, chopped onions, mashed paneer, mashed potatoes, chopped coriander, grated ginger, kasoori methi, cumin, and chopped green chilies. Add turmeric, red chili powder, and garam masala to the mixture. Just before you stuff the dough, add salt and chaat masala for flavor.

2
Done

Evenly divide the dough and shape it into small spheres, then let them rest. Shape each sphere, stuff it with the vegetable mixture, and roll it out evenly. Transfer the rolled paratha onto a hot pan. Flip it once one side is cooked, and spread oil on both sides after flipping. Cook until it is golden brown on both sides, and your dhaba-style mixed vegetable paratha is ready.

3
Done

For the mint raita, add mint leaves, a small amount of curd, and green chilies to a blender and blend until smooth. Transfer the mixture to a bowl and add thick curd, roasted cumin powder, black pepper powder, chaat masala, salt, and black salt. Mix well, and your mint raita (pudina raita) is ready to serve!
